Oxidative Stress - Threat to Animal Health and Production

Abstract
Oxidative stress constitutes an important mechanism that leads to biological damage, and is regarded as one of the causes of several pathologies that affect the growth and production in living animals. Overproduced free radicals react with cell membrane fatty acids and proteins impairing their function permanently. In addition, free radicals can lead to mutation and DNA damage that can be a predisposing factor for many other disorders Therefore a better understanding of lipid and protein oxidation processes will allow the use of antioxidants to handle and control them. This is fundamental in order to guarantee the quality and safety of livestock products for human consumption, and in turn the prevention and/or delay of several oxidation processes would allow proper livestock management and an optimal quality and shelf life conservation of various livestock products.
